El manejo efectivo durante el período de poscosecha, más que el nivel de sofisticación de cualquier tecnología dada, es la clave para lograr los objetivos deseados. Si bien las operaciones a gran escala pueden beneficiarse de la inversión en maquinaria de manipulación costosa y tratamientos poscosecha de alta tecnología, a menudo estas opciones no son prácticas para los manipuladores a pequeña escala. En cambio, las tecnologías simples y de bajo costo a menudo pueden ser más apropiadas para operaciones comerciales de pequeño volumen y recursos limitados, agricultores involucrados en la comercialización directa, así como para proveedores de exportadores en países en vías de desarrollo.

Las causas de las pérdidas y el desperdicio de alimentos en los países de bajos ingresos están vinculadas principalmente con las limitaciones financieras, administrativas y técnicas en las técnicas de recolección, las instalaciones de almacenamiento y la refrigeración en condiciones climáticas difíciles, la infraestructura, los sistemas de envasado y comercialización.
